Beef Short Rib Plate or Back Ribs for Barbecue

Summary

  • Buy 3- or 4-os slabs of beef plate brusk ribs.
  • Remove the fat cap and silverskin.
  • Apply 50/50 common salt and pepper rub overnight.
  • Cook using the three-ii-1 method at 275-300°F until fork tender.

I saw big slabs of brusque ribs like these featured at a Kansas Urban center charcoal-broil eating house on a television cooking show. The short ribs came in four-bone slabs, and the restaurant served 2 bones per order. They were meaty and tender and huge…and I just had to try them for myself using the Weber Smokey Mount Cooker.

Here's a description and photos of how I cooked these beef plate short ribs on March 17, 2013.

Select & Prep The Meat

Yous probably won't find beef plate short ribs like these just laying around at the supermarket. I bought these at Restaurant Depot, a members-but wholesale restaurant supply shop with locations throughout the The states. If yous are a Kansas City Barbeque Guild (KCBS) member, you tin can get a free day laissez passer by showing your KCBS membership card and a photo ID. Alternatively, find a adept butcher shop (which are few and far between these days) and ask for 3- or 4-os slabs of beef plate short ribs, known as IMPS #123A. Plate brusk ribs come from ribs half dozen, 7 and eight and are cut just beneath the ribeye.

Barbecue joints will sell 1 bone as a big, hearty serving, and that'due south how I serve them at home. If y'all're feeding people with smaller appetities, you tin cut the meat from the os and serve ii people per bone.

This photograph shows a Cryovac package of four iii-bone slabs of beef plate curt ribs. The whole affair weighed almost 22 pounds and price $98. I cooked 2 slabs and froze the other 2.

This photo shows the fat side of the 2 slabs I cooked.

Two three-bone slabs of beef short ribs

This photo shows the border of one slab, where you can clearly see the three basic on the bottom, the marbling of the meat, and the thickness of the fat and meat.

The fat cap on plate brusque ribs does non return equally nicely or as completely as it does when cooking pork. Y'all can attempt leaving it on, if you similar, just I prefer to remove it and the tough silverskin beneath. This allows the rub to penetrate the meat and makes for a less fatty, more enjoyable short rib to eat.

This photo shows a slab of short ribs with the fat cap and silverskin partially removed.

These photos show the ribs later trimming. As y'all tin can run into in the second photograph, in that location is however plenty of meat on the bones, and plenty of marbling to go on the short ribs moist and flavorful.

Equally for the tough membrane on the bone side, don't worry about it. Some portion of it may become crispy enough during cooking that y'all might relish eating information technology. If non, you lot just eat around it.

Utilise The Rub

Generous application of rub on beef short ribs

You can rub beef short ribs with any you similar, but I went one-time-schoolhouse Central Texas barbecue style…a 50/50 mix of kosher salt and coarse black pepper. Three tablespoons of each, mixed together and sprinkled generously on all sides of the meat, will practice the trick.

Refrigerate the rubbed short ribs overnight to give the common salt a run a risk to penetrate the meat.

Smoke The Brusk Ribs Using The three-2-1 Method

Identify 1 large chunk of smoke forest on the hot dress-down. I used a chunk of pecan. There's no need to soak the woods in water before utilise.

Assemble the cooker with the water pan in place and fill information technology with cool h2o.

Take the short ribs straight from the fridge, identify a slab on each cooking grate and embrace with the lid. Set the top vent to 100% open and leave it that mode throughout the unabridged cooking process. Showtime with all three bottom vents 100% open. Equally the cooker approaches 250°F, begin to partially close all iii bottom vents to maintain 275-300°F. Adjust the bottom vents equally needed to maintain this temperature range throughout the cooking process. Every bit you'll notice in the cooker temperature chart below, I kept the bottom vents 100% open the unabridged time.

Barbecue the short ribs using the 3-2-i method: 3 hours without foil, then two hours wrapped in aluminum foil, then 1 more hour without foil.

Later three hours of cooking, the curt ribs will look something like those shown in the fourth photo to a higher place.. Wrap each slab in aluminum foil and render them to the cooker. Cook for another two hours, so remove the foil and cook for another hour.

After five hours of cooking, you'll detect that the ribs are getting very tender; in fact, the thinner border of the slab may want to come clean off the bone. That's OK, just effort to continue it all together during the last hr of cooking.

After six hours of cooking, the meat volition be super-tender. It should measure 195-205°F internal temp. A fork will go in and out of the meat like soft butter, and when you lot twist the fork, the meat will shred easily.

There's no need to turn or baste the meat during cooking, and no demand to furnish the water pan, either.

Here'southward how the cooker temperatures and vent settings went during my melt:

Rest & Serve The Short Ribs

This photo shows how the short ribs looked coming out of the Weber Smokey Mountain Cooker afterwards six hours of cooking using the three-2-1 method.

Tent the short ribs with foil and let the meat rest for 15-30 minutes before serving.

Moist, tender short rib with great smoke ring

You can see the great smoke ring from that single chunk of pecan in these photos and just how cleanly the meat comes off the basic.

A single bone-in short rib fills a large dinner plate Meat pulls cleanly off the very large bones

This is a knife-and-fork meal, to be sure! Yous're not going to swallow these like you do a sparerib. Hither's what I wrote in my cooking log: "Prissy outside appearance, not too dark. Expert smoke ring. Very tender—perfect! Nice and moist. A little fat, like brisket point. Practiced beefiness flavor, balmy smoke season. Not likewise salty or peppery."

I hope yous'll give beefiness plate short ribs a try if you lot tin find slabs like these. Your family and friends will be impressed, and you'll enjoy some really practiced eats, I guarantee!
